Lockdown meals that are good for you and your bank balance

During the multiple lockdowns we have all had to endure last year and this year, free at home workouts have been all the hype. Why don’t you one up that by adding more healthy meal options into your diet, which won’t effect your bank balance!

Salmon, Avocado and pepper salad

Ingredients:

  • 3/4 pepper
  • 62g cherry tomatoes
  • 1 avocado sliced
  • 50g smoked salmon
  • 1/2 mozzarella ball
  • 1 medium boiled egg

Chicken and mushroom risotto

Ingredients (serves 3-4):

  • 3 cups of chicken stock
  • 3-4 chicken breasts
  • 1 tbsp olive oil
  • 100g mushrooms
  • 1 medium onion
  • 1 garlic clove
  • 200g arborio rice
  • 1 tin of chopped tomatoes
  • peas and sweetcorn

Thai green chicken curry

Ingredients (serves 3):

  • 3 step Thai green curry kit
  • 350g chicken breast
  • 100g baby corn
  • 100g mange tout
  • 150g pepper
  • 200g rice

Sloppy Joes

Ingredients (serves 4):

  • 1 onion
  • 2 garlic cloves
  • 1 green pepper, 1 red pepper, 1 yellow pepper
  • 400g 5% fat beef
  • 3 tbsp tomato puree
  • 3 tbsp wostershire sauce
  • 120ml water
  • 40g reduced fat cheddar

Salmon stir fry

Ingredients:

  • 1 salmon fillet
  • 150g rice noodles
  • 90ml hoisin sause
  • 150g mixed pepper stir fry

Honey chipotle chicken

Ingredients (serves 2-3):

  • chicken breasts *3
  • 3 tbsp chipotle spices mix
  • 3 tbsp honey
  • 5 tbsp bbq sause
  • 1 lime
  • half a yellow and red pepper
  • 80g cherry tomatoes
  • 100g peas and sweetcorn
  • 250g rice

Protein granola bowl

Ingredients (breakfast option):

  • 100g greek yogurt
  • 50g blueberries
  • 75g mango
  • 25g Goji Berry muesli
  • 50g protein granola
