Pumpkin Spice Season is back…

Did someone say baking? With the leaves falling, autumn baking is calling. not sure how to fill your kitchen with the smell of autumn coziness? We’re here to help. Here are 5 of our favourite Autumn recipes we’ve seen so far this year. So, grab your baking bowls… were about to pumpkin spice up your life. 

  1. Pumpkin Loaf Cake (recipe from the baking explorer) 
    • 200 g light brown sugar 
    • 100g vegetable oil 
    • 3 large eggs 
    • 200g pumpkin puree 
    • 225g self-raising flour  
    • ¼ teaspoon bicarbonate of soda 
    • 2 tsp cinnamon 
    • 1tsp mixed spice 
    • ¼ tsp nutmeg 
    • 1/tsp nutmeg 
    • ¼ tsp ground ginger 

    Cream Cheese Frosting: 

    • 90g unsalted butter, softened 
    • 90g icing sugar 
    • 180g full fat cream cheese

2. Cinnamon Rolls (recipe from BBC Good Food) 

  • 500g strong white bread flour, plus extra for dusting 
  • 7g sachet fast-action dried yeast 
  • 1 tsp ground cinnamon 
  • 50g golden caster sugar 
  • 200ml warm milk 
  • 2 eggs 
  • 100g butter, softened, plus extra for the tin 
  • 2 tbsp golden syrup 

For the filling: 

  • 150g light brown soft sugar 
  • 2 tbsp ground cinnamon 
  • 125g butter, at room temperature 
  • For the icing 
  • 50g soft cheese 
  • 50g icing sugar 
  • ¼ tsp vanilla extract
